Crocked Corned Beef

Using a crock-pot to slow-cook a brisket of corned beef is the ultimate method. Here’s the plan.

Crock-pot Corned Beef

Ingredients

  • 3 lbs corned beef with pickling spice packet
  • 1 ½ Cs water
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 2 Ts sugar
  • 2 tspns cider vinegar
  • ½ tspn ground black pepper

Instructions

  1. Place the corned beef into the crock pot, fat side up. Top with the seasoning pack that comes with the corned beef and rub intot the meat.

  2. Add minced garlic, sugar and pepper to the top of the meat.

  3. Add the vinegar and bay leaf to the side of the brisket and add just enough water to bring the level to about 25% of the way to the top of the meat.

  4. Cook on low for 9-10 hours.

  5. To serve, thinly slice the corned beef against the grain.
