Baked Filets of Fish with Pesto

A recipe I received from my good friend Rebecca of the “Tarheel State”, this quick, easy, and tasty entree is quaranteed to please!

Baked Fish w/Pesto

Ingredients

  • Large fish filets (halibut, grouper, trout, mahi mahi, etc.)
  • ½ C pesto
  • ⅛ C olive oil (approximate)
  • ¼ C pine nuts
  • 1½ bulbs fresh minced garlic
  • Panko bread crumbs or equivalent
  • ½ lemon

Directions

  1. Pre-heat oven to 475° F.

  2. Rinse & dry fish filets well.

  3. Mix pesto, olive oil, garlic and pine nuts to the consistency of paste and
    spread evenly over the top of the fish.

  4. Top with bread crumbs (Panko recommended) for a crispy texture.

  5. Bake for 8 minutes, then let set for 5 minutes. Squeeze lemon juice over the fish to taste, and serve.
