A recipe I received from my good friend Rebecca of the “Tarheel State”, this quick, easy, and tasty entree is quaranteed to please!
Baked Fish w/Pesto

Ingredients
- Large fish filets (halibut, grouper, trout, mahi mahi, etc.)
- ½ C pesto
- ⅛ C olive oil (approximate)
- ¼ C pine nuts
- 1½ bulbs fresh minced garlic
- Panko bread crumbs or equivalent
- ½ lemon
Directions

Pre-heat oven to 475° F.

Rinse & dry fish filets well.

Mix pesto, olive oil, garlic and pine nuts to the consistency of paste and
spread evenly over the top of the fish. -
Top with bread crumbs (Panko recommended) for a crispy texture.

Bake for 8 minutes, then let set for 5 minutes. Squeeze lemon juice over the fish to taste, and serve.
