With Fall just around the corner, here’s a great idea for a side veggie to accompany that hearty entree.
Baked Acorn Squash

Ingredients
- 2 acorn squash
- 4 pats of butter
- 4 teaspoons brown sugar
- 2 squares of aluminum foil
- PAM (or similar) cooking spray
Preparation

Pre-heat oven to 350 degrees.

Apply cooking spray to one side of both pieces of foil. Wrap each squash in a foil square – oiled side on the inside touching the squash.

Bake the squash for 1 hour until soft to the touch (like a baked potato).

Remove squash from oven, unwrap foil, and cut each into halves.

Scoop seeds from center of each half using a spoon. Put one pat of butter and one teaspoon of brown sugar into each hollowed-out cavity.

Put squash halves onto a cookie sheet and insert back into oven, cooking for an additional 20 minutes.

Remove from oven and serve immediately.
I have baked Acorn Squash many times using the same ingredients but not the method as yours. I baked 3 acorns, using your instructions and received
many compliments. I am going to serve them for Thanksgiving dinner.
